Garlic Croutons

Recipe excerpted from Cooking Freshwater Fish: 50 Contemporary Approaches to Classic Recipes by Chef Lucia Watson (In-Fisherman, 2006).

Cut 1/2 loaf of whole-grain bread into small cubes. Generously drizzle with a mixture of olive oil and melted butter, and mix with a couple of cloves of mashed garlic. Spread the croutons on a baking sheet and bake for about 10 minutes at 425 degrees F, shaking the pan every few minutes until the croutons are golden brown and crisp.
